Pantone, or PMS, colors are premixed single ink colors that are used when you desire a solid, specific color. CMYK can be used to recreate any color but there will be somewhat of a dot pattern in the image to achieve that color. A pantone ink, since it is already the desired color, can produce a dotless, smooth solid color, consistent every time.
